Ingredients
3 Pounds Chuck Roast
4 Each Bacon
2 Tablespoons Vegetable Oil
1 To Taste Kosher Salt
1 To Taste Black Pepper
1 Medium Yellow Onion
3 Whole Carrot
3 Each Celery Stalk
2 Whole Garlic Cloves
2 Tablespoons Butter
6 Tablespoons All Purpose Flour
4 Cups Beef Broth
2 Tablespoons Tomato Paste
1 Tablespoons Parsley
1 Teaspoons Thyme
1 Teaspoons Rosemary
1 Each Bay Leaf
1 1/4 Pounds Red Potato
1 1/2 Teaspoons Balsamic Vinegar
Instructions
Cook bacon, sear beef. Make it into a stew, of course.
